revital U Coffee Roasted Sweet Potato Dessert Fries Drizzled with Dark Chocolate

 This is an unexpected dessert. It's sweet potato meets mocha.

Recipe type: Gluten Free, Vegetarian

Serves: 2 to 3

Ingredients
* 2 large sweet potatoes or yams, scrubbed and dried
* 1 to 2 tablespoons grapeseed oil
* 2 to 3 tablespoons revital U coffee dry
* 1 teaspoon sea salt
* 1 ½ teaspoons cinnamon
* ½ teaspoon fresh ground nutmeg
* 4 ounces good quality dark chocolate

Instructions
1) Arrange the oven racks so that one is in the middle of the oven and the other one is on the top.
2) Preheat oven to 450 degrees.
3) Prepare two large rimmed baking sheets by lining them with parchment paper or a silpat mat.
4) Cut each sweet potato into 1 inch sticks as follows: Using a large chef’s knife carefully cut the ends off. Then cut the sweet potato in half lengthwise.
5);Turn the cut sweet potato on its flat end and cut in half again. Cut each quarter into quarters again. Continue cutting each piece until they are 1 inch-wide sticks. You can either cut the sticks in half lengthwise or keep them long. The short ones crisp up faster, but I am a big fan of long fries. Your choice.
6) ** Place all of the fries on the baking sheets. Add the grapeseed oil and toss to coat the potatoes. Then add the salt, cinnamon, nutmeg and revital U coffee.
Toss well to combine.
7) Arrange the fries on the baking sheets. Make sure the fries aren’t touching each other and that the pan isn’t overcrowded. This helps the fries to crisp up.
8) Bake the fries for 20 to 30 minutes. Half way through the baking time flip the sweet potatoes and rotate the pan. The fries should be tender in the middle and slightly crisp on the edges.
9) Allow to cool for 3 minutes before removing from the pan. Minutes before the fries are done break up the chocolate into a microwave-safe bowl.
10) Heat the chocolate on a low power setting (I used power level 3 on my microwave) 2 minutes at a time until melted.
Make sure to stir the chocolate after each heating until it is done. Alternately you could use a double boiler, stirring frequently.
11) Transfer the fries to a large plate or platter. Drizzle the chocolate on top of the fries and serve the remainder on the side for dipping.

***Serve the fries immediately or within the same evening. They are best warm out of the oven, but they are still good at room temperature. They do not keep well overnight. I suggest adjusting the recipe amount according to the number of people you are serving. I recommend ½ to 1 whole sweet potato per person.
